Celebrate spring with fresh flavors

Ah, spring – when the grass gets green, the air is warm and fresh and the produce of the season begins to sprout.

Ready to say goodbye to winter with its heavier comfort food? Chef Lorelei McInerny from Cooks of Crocus Hill offers two tasty dishes that utilize the crisp, natural spring bounty.

Herbed Lemon Pasta

“This pasta is nice and light with bright herb flavors,” says McInerny. “You get fiber from the whole wheat pasta and the peas.”

Quick Rhubarb Pavlova

Nothing completes a seasonal spring meal quite like a light, airy dessert. This pavlova comes together quickly with delicate store-bought meringues and is the perfect contrast of tart and sweet, crunchy and creamy. As an added bonus, rhubarb is packed with vitamins A, C and K as well as fiber.
